Barramundi Spring Rolls make a filet-o-fish go a long way...

These are so delicious, and a great way of stretching a single fillet of white fish, to feed a family.

You don't have to use Barramundi. Any white fish will do.

These are the type of Spring Roll you bake or fry, not the cold Vietnamese style ones, although you can use the fish for those too if you like them.

You need:

Spring Roll wrappers

1 fillet white fish

Chinese Five Spice

Fresh or tinned beans sprouts

Carrot, peeled and julienned into slivers

Then just:

Steam or pan fry the fish till it flakes easily. Allow it to cool.

Flake it and add to a bowl, along with a light sprinkle of the Chinese Five Spice. If you don't like this spice, use any that appeal to you.

To each spring roll wrapper, add a small sliver or two of fish, a few bean sprouts, and a couple of slender slivers of carrot. Roll firmly and set aside.

Spray liberally with oil, and bake in a 180C preheated oven, or pan fry or deep fry.
