Best ever Christmas stuffing...

I first cooked this about ten years ago. I used it to stuff a turkey. My lot said the stuffing was better than the turkey, and could we please just have the stuffing next year...lol!

I cook it separately now, like a log, and baste it with bought duck fat. Yes. Disgustingly good I tell you.

You'll need:

2 tablespoons butter

1 onion, peeled and finely diced

2 rashers bacon, fat removed, finely chopped

3 cups fresh breadcrumbs

3 eggs, lightly beaten

1/4 cup fresh chopped herbs (chives, parsley, oregano, anything really)

Handful of macadamias, toasted in a dry pan, and chopped

1/4 cup dried cranberries (Craisins)

1/4 cup cranberry sauce

Then just:

Melt the butter in a large frypan, and sauté the onion and bacon till the bacon is browned and the onion is translucent. Remove from the heat.

Stir in the other ingredients, and season well.

Stuff the cavity of the bird, or shape into a log, and sit in the baking dish.

Bake the bird as per directions, or bake the log, basting regularly with the duck fat (or any fat) until golden. Usually about 25 minutes.

Serve as a side.
