Comfort food....Microwave eggs in potato nests...

My daughter loves this dish. It's her equivalent of egg on toast as she eats gluten free, and it's quick and easy to prepare.

It's so simple and frugal, yet filling and comforting, and the addition of just that little teeny bit of chilli, gives it a bit of wow factor.

I do a lot of prepping ahead as you know, so I always have some mashed potato on hand. But I've been known to resort to the frozen mashed potato pellets in a busy week, as for a convenience food, they're pretty respectably priced.

So all you need for this is:

1/2-1 cup mashed potato

1 egg

1 tablespoon grated cheese

Chopped parsley and half a small chilli, sliced very finely

Then just:

Plop the mash into a small bowl...cereal bowl sized...and smoosh it around to make a sort of bowl inside the bowl. Mix in the grated cheese. Hollow out a nice round shape in the middle into which to crack your egg.

Crack the egg into the middle, and pierce the yolk with a skewer to prevent it exploding when you microwave it.

Cover it with cling wrap.

Cook on 50% power in your microwave, turning it every 30 seconds to ensure it cooks evenly, for 3-3 1/2 minutes or until the white of the egg is firm. Allow it to stand for up to a minute to complete the cooking process.

Remove the cling wrap carefully, and garnish with the fresh chopped parsley and chilli.

Now if you're like my daughter, you can then stir it all together so it looks like this....

...and enjoy it all mixed together. Me? I like mine neat and separate....lol!

We eat this for dinner on busy nights and it's stopped her from saying 'eggs? For dinner?', so that's a bonus!
