Upgrade the ordinary to spesh...Smoked Salmon Impossible Pie

I love Impossible Pies. They're the ones where you mix eggs and stuff together and whack it all in a pie dish and it turns into a lush dinner thing all by itself.

It's especially good if you've got a family with gluten sensitivity issues as it works equally well with gluten free flour as the usual one, and the taste and texture don't suffer at all.

This is one of those recipes I threw together when guests dropped in unexpectantly one day recently. The addition of just a little smoked salmon, and Greek Yoghurt instead of milk, just makes it lipsmackingly luxurious. Make sure you serve it with the dollop of yoghurt on the side. Super delectable that way!

I can see me making this for any Special Occasion Brunch actually. Add a glass of Celebratory bubbly and you've nailed it!

Smoked Salmon Luxury Pie

Serves 6-8

3 eggs

1 cup natural yoghurt + 1 cup extra for serving

1 cup plain flour

2 tablespoons chopped dill or chives + extra for garnish

1 tablespoon mustard

2 teaspoons baking powder

3-4 slices smoked salmon, chopped

1/4 onion, grated or finely diced

zest of 1 lemon

Preheat the oven to 180C.

Grease a standard sized pie dish or quiche dish generously.

Mix all other ingredients together in a large mixing bowl until well combined.

Pour into your prepared dish, and bake for 20-30 minutes until just firm to touch in the middle.

Serve immediately with a dollop of the the yoghurt and a sprig of dill or chive on the side.

Yummy, yummy, Merry Christmas. I know. It doesn't rhyme, but the intent is there!
