Pumpkin, Asparagus & Leek Quiche…

Thanks so much to the SS Team for awarding me with a Blog award for last months Silverbeet Pesto post... Makes me happy that people think that what I post is useful to others... I found out when one of Bianca's friends at work told her as I have been neglecting the Email Account that is linked to SS...
I thought I would post tonight's dinner on the blog & have made a You Tube clip of it to show how we use our garden produce for some friends & family...

Pumpkin, asparagus & leek Quiche&

250 grams 2cm diced Roast Pumpkin
1 Bunch Asparagus stalks, cut into quarters
1 Leek white, quartered lengthways & sliced thinly
1 Bacon Eye, diced small
4 Med cloves/2large cloves of garlic, finely diced
100g Feta, diced/crumbled
7 eggs beaten with 3 Tbsp of milk seasoned with Salt & Pepper
cup Sweet Basil, torn
1Tbsp oil for frying
Sliced Tomato for Garnish


Pre heat oven to 185C/365F
Fry off Asparagus, Leek, Bacon, Garlic in a hot pan in the oil for 5 minutes
Add of the Egg mixture into a greased 20 x30cm tin or dish (helps to stop the pumpkin from sticking is my theory)
Add the Pumpkin then the fried off veggies & Bacon spreading evenly in tin/dish
Sprinkle with Feta, torn Basil leaves & pour over remaining Egg mixture
Arrange sliced Tomato over top of Quiche
Bake for 30 min or until golden & cooked through&
